I've been super interested in pollinating thanksgiving cacti

But my 3 plants all bloomed at different times this winter. Now my white one is blooming again for some reason! How do I get them to bloom at the same time and multiple times a year.

You don't have to, you can collect pollen and store it.

As Greenknight says, you can store pollen.

Collect pollen on cotton buds (rub them over ripe anthers so they gather lots of pollen) and store in small plastic bags in the fridge for a few weeks until your next plant flowers.
Other more complicated ways are possible, but I've successfully pollinated cacti which bloomed out of synch in this way.
