I had a Melocactus that has rotted in the center but doesn't seem to have spread to the rest of the plant, it looks fine otherwise.

I was wondering if I could graft one of its areoles to try and propagate this plant, is this even possible, if so how would I do it?

Worth a try. I'd say. This is usually done with tubercles, which that cactus lacks, but it might still be possible. Perhaps you could cut out wedge-shaped pieces and cut matching notches in stock plants. Opuntia pads would work well as stock, I'd think, you could put multiple grafts per pad.

I'd clip off the radial spines, leave the central for a handle.
