Just to make it quite clear, cinnamaldehyde is the thing that gives cinnamon its cinnamonness. It is the essence of the cinnamony goodness of cinnamon. Cinnamon is a highly-desired spice purely because of the scent and flavour given to it by cinnamaldehyde. The quality of cinnamon is assessed by its lack of gack and adulterants and, primarily, by the clear intensity of its cinnamon odour and taste, given it by the content of so, so cinnamonic cinnamaldehyde.
If you smelt cinnamaldehyde, your first thought we be either "Christmas" or "I hope Bob Odenkirk is OK".
It would be laughable to think that one cannot tell how much cinnamaldehyde is in a given batch of cinnamon by smell and taste. It is not some obscure odourless minor component of cinnamon only discovered on a mass spectrograph two years ago, it is the very spirit of cinnamonity.
I was not sure if you had understood that point or were being shy of acknowledging your faux pas.
