The stock (bottom part of the graft) looks like some species of Echinopsis or Ferocactus , which are both relatively permanent stocks (they should last very long, maybe even as long/longer than the scion (top) lives.) I wouldn't be too worried about degrafting/regrafting this soon. Just keep an eye ...

Honestly reminds me of some early Ariocarpus seedlings. Matches the description you provided too - they prefer lower light earlier on in life than most seedlings I've grown, also you mentioned these have been growing since early 2020 - a Gymno would be a pretty decent size at this point. G. friedrichii 'angustostriatum' (or agua dulce, or many other names) would have switched to single spine by this size (my seedlings were growing single spines before they were even a full year old.) looks more "standard" if there is a "standard" to this species.

Looks like a Sempervivum , usually these color changes are due to light... so I'd suggest more light if you want the redder color to it? It does look a little blotchy though, and I'm not fully sure.
