You can use any permeable materials including vermiculite.
It depends upon the environment of your place.
My greenhouse is set as "winter" in September and the light flux in room is 2000 to 1500 lumina.
It is too bright to root for small offsets and they will turn to reddish color.
It will be reduced to around 1000 lumina when they were covered by a tissue paper.

I cut the top of scions, Pelecyphora aselliformis and set for rooting 2 years ago.
They are rooted well and it is the time of repotting.
They are in 5 cm square tubes and will move into 6.5 cm square pots.
Remained bottom of scions were cut off in this morning.
They will be set for the rooting after dried.
I also set some off-sets for rooting in this week.

I repotted aselliformis in this morning.
Roots have been developed well.
There are no tap roots but roots are thick enough.
They have been potted in 65 mm square pots.

Do you have any plants that have not been grafted and still have the tuberous roots?

Yes I do.
I sowed seeds in August 2012.
The germination rate was very good.
4 of them were grafted on H. jusbertii and some others were grafted on Pereskiopsis.
Scions grafted on Pereskiopsis were not grown well by unknown reasons.
The attached photo is remained seedlings which were not grafted.
They have tuberous roots but the bodies are too thin.

All off-sets set for the rooting on 17th December 2017 have taken well.
They are 6 each of Ortegocactus macdougallii and Mammillaria luethyi.
They have started to grow.
I cut 16 off-sets in this morning.
Some of grafted cacti have turned to be weak and I had to do so.
They are 6 of M. luethyi and 10 of M. sanchez-majoradae.
Since they are small and weak, I will do a quick drying by using a drying agent, 3 days drying.

looks really good. I'm guessing you root them in your Spring ? I've tried rooting all different times of year but they usually won't grow new roots until Spring and Mammillaria luethyii won't grow roots at all for me they just dry up. Too small and weak off a graft I'm thinking.

Yes I root in spring in here.
Since a certain soil temperature is required for the rooting, May will be best season in your place, I think.
If the off-set size of luethyii was more than 20 mm in diameter, it is not so difficult to root.

The Astrophytum on your photo is a "Kikkou kabuto monstrous".
It is one of asterias forms.
The rooting of asterias is hardest in Astrophytum species but it is possible if the cactus was young enough.
The easiness for rooting of off-sets on the photo is as same as normal asterias.
I think you can not expect the flowering of this species.
You only can increase quantity by Off-set rooting or off-set grafting.

It is not an off-set, a tubercle of Ariocarpus.
5 tubercles were set for the rooting and only 1 has been able to take.
I am not sure next happening but I will keep it.

I will degraft 2 years old scions in the end of this month.
Grafted scions have formed off-sets and ones located on bottom of scions have to remove before the degrafting.

I removed 4 Ariocarpus off-sets in this morning.
The purpose is as same as the yesterday's post.
I removed more than 30 off-sets in 2016 but it was just 4 in this year.

I collected 8 off-sets during degrafting 2 years old 2nd filial red flowering hanazono kabuto.
They are under drying process.
The drying process of A. myriostigma species was completed.
They have set in 6.5 cm square pots for rooting.
They are 5 Onzukas and 3 khoyos.
