Hi there, newbie to the forum and to Sedums, I'd like to know what to with this one, should I let it do its thing or sould I prune/trim it?

It's your choice.
If you have room to grow a large cluster, maybe leave it be.
if you only have a little space, small plants tend to look better with short stems.

I would be inclined to make a cutting of that long branch in any case - it looks rather awkward, and it's good to have a spare plant around.
