Why would you want to sow in winter, will be my first question.

I would wait for spring. March for the Haworthia, Antimima and Crassula, April for the others.

You don't say where you are, and it's not given in your profile, so we don't know what winter is like for you.

However, if you can provide light and warmth, sowing in the winter is good.
Any of those species would be fine.

If you have plenty of seeds of some of them, why not sow some seeds of the species now, to gain experience, and sow the rest in a few weeks or months time.

If you are in a coastal area or in a south January should be fine, if up North and in the mountains I’d wait until spring

I treat my Haworthia as summer growers. Although they still get a splash of water every now and then, but maybe by now just one more before I bring them in for winter dormancy.
