I got this at Home Depot, listed as cotyledon species. can't find it on Altman's website though.

On more looking I just found C undulata, and it seems like there are lots of cultivars - is this one?

Hi Mike,
yes that looks like Cotyledon undulata to me. These plants usually have a grey farinose (bloom) on them that is very easily removed with stray fingers or overhead watering. To keep it at its best do not handle it and do not let any water on the leaves. Undulata is a beautiful and one of the more choice plants.
